Cheater's Cookies: Strawberry Box-Mix Cookies


You know when you want a treat REAL QUICK and have zero patience for gourmet-style stuff? This recipe is perfect for one of those moments. And yes -- i'm cheating. These beauties are made with 3 basic ingredients only, they key one being (don't judge!) cake-mix from a box. They come together in no time, and within 15 minutes you'll have a batch of these insanely flavored and delicious cookies.


Down to the nitty-gritty —in these ravishing pink little discs, I have used a strawberry cake mix. You'll find plennnnnnty of other varieties --- orange, lemon, ginger-spice, vanilla, chocolate, carrot-cake, and much much more. Literally any of these can be used to make cake mix cookies, and that's the cookie flavor you'll get! Amazing, huh?


Now -- the two ingredients aside from cake mix are eggs, and oil. And that's it. Smoosh them together till you have a dough, scoop onto a baking sheet, bake for 10-12 minutes, and that's literally it..... you have cheater's cookies; crisp edges, and an oooey-gooey center :D.





Ingredients:


  • 1 box strawberry-flavored cake mix

  • 2 eggs

  • 1/2 cup vegetable oil

  • 1 cup add-ins (optional)


Method:


  • Preheat oven to 180.C. Line a baking sheet with parchment paper, and it set aside.

  • In a large bowl, mix together cake mix, eggs, and oil with a fork or spoon until smooth and all ingredients are combined.

  • Mix in your add-ins until evenly incorporated.

  • With a metal tablespoon or a cookie scoop, portion the dough onto the prepared cookie sheet about 6cm apart. Bake for 10-12 minutes, or until lightly golden at the edges.

  • Allow the cookies to cool on the baking sheet for 3-4 minutes, before transferring to a wire rack

  • Enjoy!
