***SUCCULENT ROASTED CHICKEN KEBAB ALERT!*** The best thing about this recipe is that it's mostly made items you’ll find in the fridge, and spices in your pantry. And the steps are also very simple -- marinade, skewer, roll it around under the broiler, and kaboom! You have extraordinary golden-charred kebabs!
Let's talk additions -- while I made these with chicken cubes only, you can also add onions and peppers between the cubes and go for a full-kebbabby-like skewer. You can also choose to marinade those veggies right in there with the chicken, but be sure to add a couple of extra tablespoons of bbq sauce and honey to cover everything.
There's also the basting. While you broil these kebabs on each side (5 minutes each or so) you can also choose to baste with bbq sauce and honey as you go, giving it all a thick and sticky glaze that charrs beautifully :)
Ingredients:
•1 kilo chicken breasts, cut into cubes
•1 tbs onion powder
•1 tbs garlic powder
•½ tsp cumin
•½ tsp thyme
•½ tsp paprika
•3 tbsp olive oil
•3 tbsp soy sauce
•3 tbs bbq sauce
•3 tbs honey
Method:
•Throw all ingredients together into a bowl. Mix well — you can work with this immediately, or leave to marinade an hour so so.
•Skewer chicken (about 5-7 cubes per skewer) and set the skewers side by side on a foil-lined baking sheet.
•Pop right under the broiler for about 5 minutes. Rotate kebabs every 5 minutes until cooked through.
•Optional: baste kebabs in more bbq sauce and honey whole rotating under the broiler if you want an extra sticky zing
•Serve hot and enjoy!
